BOARD OF DIRECTORS

Zoemi Romero

Zoemi was born and raised in Mexico, proudly leading as the oldest of three siblings with the loving guidance of her mom and grandparents.  Her journey in hospitality began with her education in the field, which ultimately paved the way for an exciting opportunity in Aspen, Colorado.  After making the move to the USA, she found her home in Denver and spent several years with Chipotle until 2013, when she welcomed her daughter Emma into the world, followed by daughter Amanda in 2016.  She also has a wonderful stepson, enriching her family's dynamic.


Her career took a meaningful turn when she became an eligibility technician for human services, helping individuals access vital programs like Medicaid, SNAP, and long-term care.  In 2017, she and her husband seized the opportunity to pursue their passion for the culinary arts by launching their first restaurant, Colonna's Pizza, in Centennial.  In 2022, she made the leap to join the restaurant world full-time and, in 2023, celebrated the opening of Cencalli in Littleton, with plans to expand to Parker, soon.


As a woman of faith, Zoe strives to be a positive example for her children, her community, and everyone around her.  She has an insatiable love for travel and an appreciation for experiencing diverse cultures through food and beverage.  She is also a passionate advocate for the Latino community in the USA, committed to celebrating their heritage and fostering inclusive spaces wherever she goes.
